Ingredients
  

Baked Plantain

  • 2 Plantains ripe, medium sized

Refried Beans

  • 2 tablespoons Cooking oil
  • ½ Onions medium, chopped
  • 2 cloves Garlic chopped
  • 2 teaspoons Smoked paprika
  • 1 teaspoon Cumin
  • ½ teaspoon Chilli flakes
  • Salt to taste
  • 2 Pinto beans cans drained

Instructions
 

Baked Plantain

  • Set the oven to 1800C.
  • Cut the two ends off the plantain and make a cut across the length of the skin.
  • Remove the skin from the plantain.
  • Make a cut down the length (You can follow the line already made from when you removed the skin).
  • Place the plantain on a lined tray inside the oven and allow to cook for 10 mins.
  • Turn on the side and leave for another 10 mins.  
  • Remove from the oven and allow to cool.

Refried beans

  • Heat the oil in a pan.
  • Add onions and allow to soften, stir occasionally.
  • Pour in the garlic, smoked paprika, cumin and chilli powder and some salt. Stir continuously for 1 min.
  • Add the beans and pour in about a quarter of cup of water.
  • Mix the content of the pan, and cover 10 mins to cook.
  • Reduce the heat.
  • Use a potato masher or wooden spoon to mash the beans to your desire texture (as you mash the beans, the consistency becomes thick, and you may need to add more water).
  • Remove from heat
  • Stuff the refried beans into the opening on the plantains.

Notes

You can substitute the canned pinto with one cooked from scratch. Use two cups of cooked pinto beans.
Save some time by cooking the refried beans while the plantain is in the oven.
