Ingredients
  

  • 2 tablespoons Oil
  • 1 medium Onion chopped
  • 3 cloves Garlic chopped
  • 1 teaspoon Smoked paprika
  • ½ teaspoon Ground coriander
  • ½ teaspoon Chilli flakes
  • 1 can Chopped tomatoes
  • ½ can Chickpeas rinsed and drained
  • Salt to taste
  • 3 Eggs

Instructions
 

  • Cook the onions in the oil until soft and translucent.
  • Add the garlic, smoked paprika, ground coriander and chilli flakes. Cook for 30 secs while stirring continuously.
  • Pour in the chopped tomatoes and chickpeas. Add some salt to taste.
  • Allow to cook for around 10 mins.
  • Use a spoon to make 3 wells in the pan and break one eggs directly into each well, respectively.
  • Reduce the heat and cover the pan.
  • Allow the eggs to cook to your liking and serve with bread.
