Everyone loves a tray bake! It is the perfect "not sure what to have" meal and doesn't come better than this crispy chicken suya tray bake with yam and vegetables. It is so delicious that you will want to make it again and again.
Homemade suya spiced chicken is usually served with fried foods like fried yam, plantain etc. However, this is a more effortless and healthier version; you only need to toss the ingredients in spices before throwing in a baking pan to cook.

Chicken Suya Tray Bake With Yam - Recipe
Here are the ingredients you need...
- Suya spice
- Salt
- Vegetable oil
- Chicken thighs
- Yam
- Purple onions
- Broccoli
- Carrots
A few notes about the ingredients...
- Chicken cut: I like to use chicken thigh for tray bakes because it remains moist and juicy through baking. You can use your preferred or available cut of chicken. Drumsticks and chicken breasts also work well for chicken suya.
- Yam: Dundun (crispy fried African yam) is a traditional accompaniment to suya chicken, which is why I have included it in my traybake chicken. You can exclude this or substitute it with similar ingredients like potatoes or sweet potatoes.
- Vegetables: Most vegetables work well in tray bakes, and they are a good way to use left-over/old vegetables. Use what you have in your kitchen or your favourite vegetables for this easy chicken tray bake.
- Suya spice: You can make suya pepper or buy it from African shops or online - Here's a good one I found on Etsy. You will find the homemade Nigerian suya spice recipe here if you want to make your own. I usually make more than I need, store it in an airtight container and use it over many weeks.
How To Make Chicken Suya Tray Bake
Add the suya spice into a bowl and taste for salt with the tip of your tongue. Add more salt if required. Pour the oil in and mix to form a paste.
Rub the paste all over the skin of the chicken, apply under the skin where possible too, to get as much flavour as possible. Leave for at least 30 mins to marinate.
Heat the oven to 2000C or 1800C fan.
Peel the yam and cut into batons. Keep in a bowl of water to prevent browning.
Peel the onions and cut into quarters. Wash the carrots and remove the top. Cut the broccoli into smaller pieces.
Pour the yam and vegetables into the bowl containing the suya spice paste. Toss well.
Add the chicken skin side up on the tray. Arrange the yam, carrots, and broccoli around the chicken thighs and place the tray in the oven.
Allow to cook for 30 - 40 mins. Check the chicken is cooked through before removing from the oven.
