What Pasta shape Is Best For Pasta Soup?
You can use different pasta shapes for pasta soup, depending on the type of soup you are preparing. Smaller pasta shapes such as alphabets, orzo, aneli and pastina are used for light or broth-based soup. Slightly bigger shapes such as conchiglie, macaroni, rigatoni and orecchiette are used for thicker soups.
I used conchiglie for this pasta soup recipe, and it worked perfectly with the thick liquid.
Is Pasta Healthy For You?
There is a notion that pasta is not healthy because it is processed carbohydrate. This is not true; pasta is a good source of complex carbohydrates, which release energy slowly, and helps to keep your body fueled for longer. The key is eating it in moderation. A good way to do this is by combining pasta with vegetables, healthy fats and proteins. This is one of the reasons why this pasta soup with prawns and vegetables is good for you.
Another determining factor is how you cook the pasta. The recommendation is to cook pasta “al-dente”, which means “with a bite”. Pasta cooked this way is still a bit firm, which means the carbohydrates takes longer to break down, which helps to keep the blood sugar levels stable.
Whole grain pasta is even better for health because it has lower calories, but higher in fibre and other nutrients.
Pasta Soup With Prawns Recipe
Allow the soup to be a bit more runny than you like it during cooking, This is because the pasta will absorb some of the liquid; you may end up with a thicker soup.
This pasta soup is suitable for freezing but could become soft and mushy if it has been cooked too soft in the first place. For this reason, it is important to cook the pasta according to pack instructions, to get the right texture.
Pasta Soup With Prawns
- 2 tablespoons Oil
- 1 Onion chopped
- 2 cloves Garlic chopped
- ½ teaspoon Smoked paprika
- ½ teaspoon MIld curry powder
- ½ teaspoon Chilli powder
- 100 ml Tomato puree
- 1 teaspoon Oregano
- 3 cups Vegetable stock
- 1 cup Pasta
- 125 g Frozen prawns
- 1 cup Mushroom sliced
- 10 strings Green beans sliced
- 1 Carrots chopped
- Heat the oil in a saucepan under low heat.
- Cook the onions in the oil until soft and translucent.
- Add the garlic, smoked paprika, chilli and curry powder. Stir continuously for 30 secs.
- Pour in the oregano, tomato puree and vegetable stock. Allow to boil, then pour in the pasta and the prawns.
- Cover the pan and allow to cook for 5 mins then add the mushrooms, green beans and carrots.
- Cover the pan again and allow to cook until the recommended cooking time for the pasta.
- Remove the pan from heat.
This looks really good for these winter days. And not too many ingredients, easy to make a bunch of it. Pinned for Sunday dinner:)
